Preparation
Prepare the red onion, peeled carrot, and peeled mangos using a mandoline so all the ingredients are roughly the same size. Set aside.
In a medium bowl, combine fish sauce, lime juice, brown sugar, and chopped Thai chilies (optional). Mix well.
Add the prepped red onions, mangos, carrots, and cilantro to the bowl and toss to combine.
Adjust with more fish sauce, lime juice, or brown sugar as desired.
