Asian Chicken Lettuce Cups

These lovely little lettuce cups are brimming with fresh flavors and textures thanks to lots of vibrant veggies, toasted cashews, and an Asian-inspired sauce.
Ingredients
- ½ cup soy sauce
- 3 tablespoons rice wine vinegar
- 1 teaspoon red chili flakes
- 2 tablespoons granulated sugar
- 2 tablespoons sesame oil, divided
- 1 tablespoon toasted sesame seeds
- 4 cloves garlic, minced
- 2 tablespoons minced ginger
- 1 pound ground chicken
- ½ cup shredded carrots
- 1 bunch scallions, bias cut
- 4 red radishes, cut into matchsticks
- 2 tablespoons chopped cilantro
- ¼ cup cashews, toasted and crushed
- 1–2 heads butter lettuce, leaves separated
Preparation
Mix together soy sauce, rice wine vinegar, red chili flakes, sugar, 1 tablespoon sesame oil, and sesame seeds, then reserve.
Heat remaining sesame oil in a sauté pan over medium-high heat. Add garlic and ginger and sauté for 30 seconds. Add chicken and sauté until lightly browned and chicken is cooked through.
Add ½ cup of the soy sauce mixture to the chicken, then reduce liquid until nearly dry. Remove from heat and add the carrots, scallions, radishes, cilantro, and cashews. Mix until evenly incorporated.
Spoon 3–4 tablespoons of chicken mixture into each lettuce cup and serve with remaining soy sauce mixture.
